Salmon Patties

Prep Time: 8 Minutes

Cook Time: 5 Minutes

  • 2 cans skinless & boneless salmon - drained very well (tuna size can)

  • 4 egg whites

  • 1 tsp. parsley

  • 1/2 tsp. basil

  • 1 tsp. lime juice

  • 2 tsp. oat bran

  • 1/4 onion - chopped finely

  • salt & pepper to taste

  • Pam

Mix the oat bran and egg in a bowl.
 
Add the remaining ingredients and blend well by hand.
 
Form the mixture into 5 patties.
 
Preheat a non stick frying pan on medium for 3 minutes. Coat the pan with 6 seconds of Pam and add the patties.
 
Turn over when edges are golden (approx. 3 minutes) and cook for another 2 minutes.

2 patties count as 1 dinner main
