Sushi Salad

Spicy Mayo

  • 1/3 cup lite mayonnaise

  • 1 TBSP. Sriracha hot chili sauce

Salad

  • 2 cups cooked brown   sushi rice

  • 3 sticks kani - shredded

  • 1 avocado - sliced

  • 1 kirby - sliced

  • low sodium soy sauce - optional

  • 1/2 tsp. toasted sesame oil

Mix the spicy mayo ingredients and put aside.

 

In a large bowl, mix the salad ingredients.

 

Mix in the spicy mayo.

 

You can add soy sauce on top as you would a roll of sushi.
Divide into 3 lunch servings
 
Each serving counts as 1 lunch
